For a simple grilled side dish, requiring minimal effort and few ingredients, this easy grilled tomatoes recipe is a great choice. Halved and seasoned with salt and pepper, the tomatoes are then garnished with slivered sweet onion and basil.

Grilled Tomato Recipe
Use medium size round tomatoes for this recipe. In-season local tomatoes will provide the truly best flavor.
- 6 medium tomatoes
- 1 tablespoon olive oil
- 1 tablespoon grated Parmesan cheese
- 1/2 of a small white onion, slivered
- 1 small bunch of fresh basil leaves, slivered
- 1/2 teaspoon kosher salt
- 1/4 teaspoon cracked black pepper
Preheat your grill to medium-high.
Cut the tomatoes in half, then carefully remove the seed containing watery pulp. It’s easiest to use a finger tip to do the job, but the handle end of a kitchen teaspoon works well too.
Season the cut sides with salt and black pepper. Brush olive oil on all sides of the tomato halves.
Lay the tomatoes on the grill, over direct heat, cut side down. Close the grill and cook for 2 to 4 minutes. When done, the skins will start to pull away from the tomato flesh, and the cut sides will show some browning.
Remove the grilled tomatoes to a serving dish, cut side up. Sprinkle each with Parmesan cheese, then add a pinch of the slivered onion and basil. Serve piping hot.
