Make a batch of this new potato salad in the spring, when the first new potatoes are in. Early season, fresh new potatoes are at their peak of flavor, and really make this grilled potato salad recipe outstanding!
New potatoes are small spuds dug from the soil under the potato vine during it’s early stage of growth. Those small spuds have a fresher, cleaner flavor than larger, mature potatoes.
Potato Salad Recipe
New potatoes don’t take a long time to cook on the grill, and because the skin is so tender, there’s no need to remove it when you put the salad together.
- 3 pounds small red new potatoes, in season
- 2 tablespoons vegetable oil
- 3/4 cup mayonaisse
- 1/4 cup sour cream
- 2 tablespoons white wine
- 2 tablespoons Dijon mustard
- kosher salt and black pepper
- 1/4 cup fresh dill, chopped
- 1/2 cup celery, chopped
- 1/2 cup white onion, chopped
Clean the new potatoes, coat with oil and season with salt and pepper. Grill over direct, medium heat for 15 to 20 minutes, or until tender. Remove and cool.
In a large bowl, mix together the mayo, sour cream, wine, mustard, dill, and one teaspoon each of salt and pepper. Cut the grilled new potatoes into halves or quarters, depending on size. Bite size pieces is what you’re after here.
Add the cut new potatoes, onion and celery to the bowl of dressing and fold together. Refrigerate a few hours before serving.
You can make this new potato salad recipe with new white potatoes, too. Prepare and grill them just like you would the small red potatoes.
