Try a batch of these grilled smashed potatoes as an appetizer or as a tasty potato side dish. New potatoes are cooked until moist and tender, then grilled to a golden brown.
You can use either red or white new potatoes for this recipe. Choose unblemished spuds that are about one inch in diameter.
- 2 pounds of new potatoes, red or white
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon water
- 2 tablespoons olive oil
- 1/4 cup chopped scallions, green tops included
- aluminum foil
Wrap the potatoes in foil with the tablespoon of water. Grill over medium heat for 15 to 20 minutes, or until tender. Remove the potatoes from the foil pack, and gently press each one to slightly flatten. Don’t overdo the smashing or the new potatoes will fall apart.
Season the smashed potatoes with salt and pepper and brush with a generous amount of olive oil.
Make a simple dip for these by combining 1/2 cup of sour cream with 1/2 teaspoon of sweet paprika and a pinch of cayenne pepper. The smooth, creamy dip goes well with the brown and crispy potatoes.
