Similar to garlic fries, these grilled potato wedges are heavy on the garlic flavor. Potato wedges are a great barbecue side dish, and go well with just about anything.
You can use any variety of potato for this recipe. Russet potato wedges will be a light and crumbly in texture. If you make ’em out of red potatoes they’ll be more firm and moist. Either way, they’ll definitely taste good!
Potato Wedges Recipe
Choose potatoes that are uniform in size for this recipe. That’ll make it easier to end up with similar size wedges, important for even cooking.
- 3 pounds of whole potatoes, any variety
- 2 tablespoons olive oil
- 1 tablespoon chopped garlic
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper (optional)
Cut the potatoes in half, then divide each half into four same-size wedges. Put the wedges into a gallon food storage bag, along with the oil, garlic, salt and hot pepper powder. Squish everything around so the potatoes are well coated with oil and garlic.
Preheat grill to medium. Place the wedges skin side down on the grate, over direct heat. Close the grill. Your grilled potato wedges need 15 to 20 minutes of cooking time. Perfectly cooked tater wedges will show some browning and be nice and tender. Serve with cool sour cream for dipping, or even just plain ketchup. Either way works for me!
