This bright yellow grilled potato salad recipe uses a mustard based dressing. The flavor, as you might guess, has a bit of tang to it, making it a great accompaniment to sweet barbecued ribs.
I usually use white potatoes for this recipe because their slightly crumbly texture makes the potato salad soft and easy to eat. Peeling the potatoes is optional.
Grilled Mustard Potato Salad
If you plan to peel the potatoes, do it after they’re grilled.
- 3 pounds of round white potatoes, grilled whole until tender
- 4 hard boiled eggs, chopped fine
- 1/4 cup celery, finely chopped
- 1/2 cup white onion, finely chopped
- 2 cups Miracle Whip, or similar salad dressing
- 1/2 cup sour cream
- 1/3 cup sugar
- 1/4 cup yellow prepared mustard
- 1/4 cup white vinegar
- 1-1/2 teaspoons of celery seed
- 1/4 teaspoon paprika
Cut the potatoes into bite size chunks and toss into a large bowl. Add the eggs, celery and onion and toss together.
In another bowl, combine the salad dressing, sour cream, mustard, vinegar, sugar and celery seeds. Stir the potato salad dressing into the potato mixture, then refrigerate. Just before serving, sprinkle on the paprika, just for good looks!
If you’d prefer your grilled potato salad recipe< a bit more on the tart side, increase the amounts of mustard and vinegar to 1/3 cup each. Optional garnishes – chopped parsley or chives.
