Yukon golds give this grilled potato recipe great flavor and a cool, buttery color. The yellow flesh of the Yukon golds is naturally creamy and moist, almost buttery.
But that’s not good enough! Add a big pat of butter to the taters for really rich, satisfying flavor. These grill wrapped in foil, so cooking is easy and cleanup is trouble free.
Foil Packet Potatoes
The potatoes steam inside the foil, so they are superbly moist and tender.
- 2 pounds of Yukon Gold potatoes, washed and dried
- 1 medium yellow onion, peeled
- 4 tablespoons dairy butter
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
- 4 squares of aluminum foil
Cut the Yukon gold potatoes into 1/4 inch thick slices, and the onion into 1/8 inch thick slices. Divide the potato and onion slices into 4 equal servings.
Alternate slices of potato and onion on the foil, then season with salt and pepper. Place a pat of butter on top of each potato and onion pile, then sprinkle on a bit of the chopped parsley.
Finish sealing up the foil packet potatoes, then place in your grill over direct, medium heat. Cook for about 30 minutes, or until the potato slices and onions are nice and tender.
Be careful when opening the grilled potato recipe foil packs. Escaping steam can easily burn the skin.
