Simple and tasty, grilled new potatoes can be cooked in a matter of minutes. These small potatoes, whether red or white, can be grilled whole or cut into halves or slices. When quartered, they make dandy grilled potato wedges.
The small new potatoes have a more solid texture and sweeter flavor than mature potatoes. The reds and Yukon Golds have a more waxy texture than the white potatoes.
Unlike mature potatoes they are often stored in the refrigerator, which tends to increase the sweetness. When potatoes are exposed to cold, enzymes cause some of the starches to be converted to sugar.
Grilling New Potatoes
New potatoes can be grilled on your charcoal grill or your gas grill outdoors. They also grill nicely on a wide variety of indoor grills. Small electric grills with hinged lids work especially well since the new potatoes are cooked on both sides simultaneously.
