Marinated, grilled coconut pineapple will satisfy the sweet tooth of friends and family. This unusual barbecue dessert is easy to make, too.
Grilled fruit recipes like this grilled pineapple are healthy eating, much more so than say, a big bowl of ice cream and a handful of chocolate chip cookies. The sweet-tart taste of pineapple is especially good after bbq pork of any kind.
Grilled Pineapple Recipe
This recipe contains rum (for flavor only, I promise!), but if you’re serving the young ‘uns and don’t want them to fall asleep, you can omit the rum and it’s still a great tasting grilled dessert recipe. Replace the rum with orange juice or lemon-lime soda, and the kids will be alright.
- 4 fresh pineapple rings
- 2 tablespoons clover honey
- 2 tablespoons Bicardi dark rum
- 1 teaspoon fresh squeezed lemon juice
- 1 cup of unsweetened, flaked coconut
Combine the honey, rum (or orange juice), and lemon juice. Marinate the pineapple rings for one to two hours in the refrigerator. Remove the slices from the marinade and drain, then coat the pineapple rings with the shredded coconut, pressing it in well.
Grill the pineapple over medium direct heat for about ten minutes, turning occasionally to prevent burning. Allow to cool a bit before serving.
If you just can’t stay away from the ice cream, top each of the hot grilled pineapple slices with a big scoop of vanilla bean ice cream when served. Now that’s what I call dessert!
