Great as an appetizer, this proscuitto wrapped asparagus recipe is both fancy and simple. Fancy because proscuitto is a very special, intensly flavored ham from Italy. Simple, well, because it’s a breeze to make!
Proscuitto is sliced very thin because of its big flavor, and it doesn’t take a lot to flavor the asparagus spears. A single layer wrap around the spear is enough.
Grilled Asparagus Proscuitto
INGREDIENTS
1 bunch fresh asparagus (approximately one pound, trimmed)
1/4 pound proscuitto
2 tablespoons olive oil
Fresh ground black pepper
Round toothpicks

Trim the tough ends from the asparagus. Use a vegetable peeler, remove the skin from the lower half of the stalks. Coat lightly with olive oil and season with pepper. Wrap proscuitto around the center of each asparagus spear, securing with a toothpick.
Grill the proscuitto asparagus over medium heat for about 3 minutes per side, until tender. Serve warm off the grill.
