Sometimes a cool asparagus dish hits the spot, like this marinated asparagus recipe . Grill-steamed asparagus spears are marinated overnight in a tart asparagus marinade and served chilled. It’s a great side dish for summer eating!
Usually asparagus is grilled in a way that browns the spears slightly, but for this recipe, it’s steamed until tender, yet still crisp when eaten.
Marinated Asparagus Recipe
- Two pounds trimmed asparagus spears
- One tablespoon water
- One tablespoon lemon juice
- One-quarter teaspoon salt
- One-eighth teaspoon black pepper
Using a twelve inch square of heavy duty foil, make a packet containing the asparagus, water, lemon juice, salt and pepper. Grill over medium heat for five minutes, or until the asparatus is just tender. Chill in cold water.
For The Marinade
- One quarter cup brown sugar
- One qarter cup white wine vinegar
- One-quarter cup soy sauce
- Two tablespoons vegetable oil
- Two teaspoons lemon juice
- One-half teaspoon minced garlic
Add the brown sugar, vinegar, soy sauce, oil, lemon juice and garlic to a small saucepan and bring to a simmer. Continue to simmer for five minutes, then cool. Drain the steamed asparagus spears and place in a glass or plastic container, then pour in the asparagus marinade. Cover and chill overnight the your refrigerator.
Marinating the asparagus overnight gives the best flavor, but if you don’t have the time, give it at least one hour. Arrange the marinated asparagus on a serving platter, and serve to your soon to be impressed guests and family.
