The perfect way to start a meal, grilled asparagus appetizers are easy to make, and a whole lot of fun to eat! Fresh, young asparagus spears are sectioned, arranged on toothpicks, and grilled until just tender.
When done, the appetizers are brushed with garlic butter, adding both richness and flavor.
- 1 pound of fresh asparagus spears
- 1/4 cup salted butter
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/2 of a lemon
- wooden toothpicks, soaked in water
Melt the butter in a saucepan. Add the minced garlic and saute over very low heat until softened, 2 to 3 minutes. Remove from heat to cool.
Trim the bottom ends from the asparagus stalks, and peel off the tough skin from the base. Cut the spears into two inch lengths.
Salt the asparagus, then skewer three sections together using a pair of toothpicks. Brush lightly with the garlic infused butter.
You can cook your grilled asparagus appetizers on your outdoor grill, over medium direct heat, or indoors on a countertop grill. Cook for 2 to 3 minutes per side, or until just tender. Serve with a squeeze of fresh lemon juice.
