By pan roasting asparagus in the grill, there’s more intense browning where the spears contact the pan. Keeps the grill grate a little cleaner, too.
Grill Roasting Asparagus
Garlic, lemon and tarragon highlight the flavor of this roasted asparagus recipe.
- 1 pound trimmed asparagus spears
- 1 teaspoon vegetable oil
- 1 minced clove of garlic
- 1 teaspoon fresh tarragon, chopped fine
- 1 teaspoon fresh squeezed lemon juice
- 1 tablespoon melted butter
- 1/2 teaspoon salt
- 1/4 teaspoon cracked black pepper
In a shallow baking pan, coat the trimmed, clean and dry asparagus spears with vegetable oil. Season with the salt and pepper, tarragon and garlic. Place the pan in a covered grill (preheated to high) over direct, medium heat. Cook for 3 to 5 minutes, or until the asparagus spears start browning on top. Be watchful that the asparagus doesn’t burn where it touches the pan.
