Asparagus flavor permeates the breast meat, creating an unusually enjoyable dish. And when sliced, it just looks plain cool!
Speared Chicken Breasts
The secret to adding awesome asparagus flavor to the chicken is…
- 4 large skinless, boneless chicken breasts
- 4 large spears of asparagus, trimmed
- 1 tablespoon olive oil
- 1 teaspoon sweet paprika
- Juice of 1/2 a lime
- 1 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
Lightly oil the asparagus spears, season with 1/2 teaspoon salt, 1/4 teaspoon black pepper and 1/4 teaspoon of the paprika. Grill quickly over high heat, just long enough to lightly brown them. They don’t need to be completely done, since they’ll finish as they cook with the chicken.
With a long, narrow blade knife pierce a hole lengthwise through each chicken breast. Insert one of the pre-grilled asparagus spears though each breast. Rub the chicken with the remaining olive oil, then season with the rest of the salt, pepper and paprika.
Grill over direct, medium heat for 8 to 10 minutes (4 to 6 minutes per side), or until done. When the internal temperature of the chicken reaches 165 degrees Fahrenheit, it’s time to remove from the grill. Let the chicken rest 5 minutes, and squeeze on the lime juice right before serving.
