Red Potatoes
If you’ve never tried grilled dill potatoes before, you are most assuredly missing out. Made with new red potatoes and fresh dill, this dish literally screams with fantastic flavor!
And if you can’t find new potatoes, just use the nicest looking small red potatoes you can find. The texture and flavor won’t be quite the same as new potatoes, but they’ll still be great.
Best Red Potato Recipe
Well, at least that’s my opinion about this recipe. But I really think that when you try it, you and I just might agree it’s the best.
- 3 pounds new red potatoes
- 6 tablespoons butter
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- 2 teaspoons chopped garlic
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 squares of aluminum foil
Trim and wash the new red potatoes and cut in half. If you couldn’t find new potatoes, cut larger potatoes in quarters. Season with the salt and pepper.
Divide the potatoes into six equal portions, placing each in the center of an aluminum foil square. To each serving of potatoes, add one tablespoon of butter, 1 teaspoon each of fresh chopped dill and parsley, and 1/3 teaspoon of the chopped garlic.
Fold the aluminum foil around the potatoes and place them in a medium grill for 30 to 40 minutes, until tender. Remove from the grill and serve.
